Traveling through Italy is a true awakening of the senses. There is nothing quite like wandering down a cobblestone alley in the late afternoon and catching the rich, sweet aroma of tomatoes and garlic simmering in a local trattoria.

The secret to Italian cooking is simplicity and high-quality ingredients. If you are searching for the best-ever tomato pasta sauce, you only need to look at the culinary traditions of Italy’s most iconic destinations.
The Heart of Italy’s Tomato Culture
When planning a food-focused trip to Italy, two cities stand out for their mastery of the classic red sauce. Be sure to add these to your travel itinerary:
- Naples (Napoli): This is the undisputed capital of the Italian tomato. Thanks to the rich volcanic soil surrounding Mount Vesuvius, the region produces the world-famous San Marzano tomatoes. In Naples, the pasta sauce (pomodoro) is kept brilliantly simple to let the natural sweetness of the tomatoes shine.
- Rome (Roma): While Rome is famous for its creamy and peppery dishes, it also masters the rich, savory tomato sauce in classics like Amatriciana. Sitting at a sidewalk café in the Trastevere neighborhood with a plate of red sauce pasta is the ultimate Roman holiday experience.

Bring the Italian Vacation to Your Kitchen

You do not need to hop on a plane to experience the magic of an authentic Italian dinner. This incredibly simple recipe will transport you straight to a rustic kitchen in Naples.
The secret to this best-ever tomato pasta sauce is using real whole peeled tomatoes (preferably San Marzano) and taking the time to let them simmer.
Ingredients
- 1 can (28 oz) whole peeled San Marzano tomatoes
- 1/4 cup high-quality extra-virgin olive oil
- 3 massive cloves of garlic, smashed and peeled (do not mince, you want them whole for flavor)
- 1 sprig of fresh basil (plus extra leaves for serving)
- Salt to taste
Instructions
- Crush the Tomatoes: Pour the canned tomatoes into a large bowl. Using your clean hands, gently crush the tomatoes until they are broken down into small, rustic chunks.
- Infuse the Oil: Heat the olive oil in a large skillet or saucepan over medium-low heat. Add the smashed garlic cloves. Let them gently sizzle and turn lightly golden (about 3–5 minutes). This infuses the oil without making the garlic bitter.
- Simmer: Carefully pour the crushed tomatoes and their juices into the pan (watch out for splatters). Add a generous pinch of salt and lay the sprig of basil on top.
- Slow Cook: Bring the sauce to a gentle simmer. Reduce the heat to low, and let it cook uncovered for 45 minutes to an hour. The sauce will thicken, and the oil will turn a beautiful deep red.
- Finish: Remove and discard the garlic cloves and the wilted basil sprig. Toss the sauce directly with your freshly cooked pasta, garnish with fresh basil leaves, and serve immediately.
